Pickle Barrel’s Avocado Toast

INGREDIENTS:

  • 2 poached eggs
  • 1 slice thick multigrain bread
  • ½ avocado (smashed)
  • 2 slices tomatoes
  • Mixed greens
  • 1 slice Swiss cheese
  • ¼ oz (7.4 ml) butter
  • Pinch pea shoots
  • ½ oz (14 g) spinach sauteed.
  • 1.5 oz (44 ml) Vidalia onion dressing
  • 1.5 oz (44 ml) Hollandaise kicker sauce
  • 2 strawberries cut in half
  • 10 blueberries

 

PREPARATION:

  • Butter one side of bread and place on the grill to toast.
  • Place the sliced cheese on the bread, followed by the tomato.
  • Saute the spinach and place on top of the tomato.
  • Smash the avocado and place on the length of the bread.
  • Add the poached eggs on the avocado toast.
  • Serve with a side of hollandaise spiked with TABASCO® Original red Sauce, the mixed berries and the mixed greens with dressing.
  • Garnish with pea shoots.
